Crazzy Cooking Challenge .. Grilled Cheese Sandwich

I love Cheese.. its just so yummy.. So when I stumbled across this amazing Grilled Cheese Sandwich from Cooking Classy, I knew my search was over and this would my recipe for the Crazy Cooking Challenge..

Photobucket

Though the recipe has ham in it.. I was just so fasinated with the idea of combining Cheese & Broccoli that I decided to make a vegetarian version of the recipe.. substituting ham with some sliced fresh button mushrooms.. And trust me, the sandwich came out yummm..

Grilled Cheese Sandwich
Ingredients
Bread - 2 slices (brown/ white/ whole-wheat)
Cheddar Cheese (grated) - 3 Tablespoon
Parmesan Cheese (grated) - 2 Tablespoon
Broccoli (chopped into small florets) - 3-4 Tablespoon
Button Mushrooms (sliced) - 3
Onion Powder - a pinch (optional)
Garlic Powder - a pinch (optional)
Black Pepper - a pinch
Salt - to taste
Olive Oil - 1 Tablespoon

Preparation
1. Add water to the broccoli florets in a bowl and microwave for about 30-45 seconds - this will soften the broccoli. Alternatively, you could steam it too.

2. Combine Cheddar Cheese, Parmesan Cheese, Steamed Broccoli, Salt, Pepper, Garlic Powder & Onion Powder in a bowl and mix well.

3. Layer the mixture over a slice of bread and then place the sliced mushrooms on it. Top with the other slice and press the sandwich gently with with both hands.

4. Heat a non-stick pan and drizzle 1/2 a tablespoon of Oilve Oil on it. Place the sandwich over it immediately. Flip the sandwich after about a minute but do remember to drizzle the balance Oilve Oil before you place the uncooked side. Leave it for about another minute before serving.. Incase you want the cheese totally melted, the sandwich could be heated for a lil longer...

5. Serve hottt.. this Crunchy Grilled Cheese Sandwich will keep you wanting moree...

My sister is over to stay with me and we decided on making the Spicy Garlic Mozzarella Muffins.. it just read so tempting and we wanted to try a non-sweet muffin..

Thanks Sangee .. it was a great recipe and we hogged on it.. The only lil modification I made was that I used Whole Meal Flour instead of All Purpose Flour...

All Purpose Flour - 1/4 cup
Garlic -   2 cloves (finely chopped)
Parsley -    2 tbsp (I used fresh)
Green chilli -   3 (finely chopped)

Salt -  1/2 teaspoon
Milk -  1/2 cup

Mozzarella Cheese -  1/2 cup(shredded)

Preheat the oven at 375 F.

In a bowl, add flour, garlic, parsley, chilli, baking powder, salt and mix well.

In another bowl, mix milk, melted butter and beaten egg. Add this milk-butter-egg mixture to the flour and  mix well.

Line Muffin Cups in a baking tray and  fill 2/3 of each cup.

Bake it for 17-20 minutes or until top turns light golden brown.

Muffins are ready... You can have them with scrambled eggs or with soup or just like that... They just melt in the mouth...

Egg & Cheese Stuffed Paratha

No mood to cook a full meal? But something tasty... Thats me since a last few days.. the winter laziness and preparing to host some guests next week.. I am just not cooking a full meal.. And resorting to my good old fav CHEESE & EGG PARATHA..

I recall as a kiddo I used to wait eagerly for saturdays as mom used to make us egg parathas for brunch.. I am sure each one of us would have such cute memories from childhood and food that we had then and miss now... I don miss the paratha thou but miss it being made by mom :))

This might be the easiest recipe of a paratha and I assure you that you would love it .. and your kids would hog on it...

Wheat Flour - 1.5 cups
Salt - to taste
Oil - 2 teaspoon
Water
Eggs
Cheese (grated)
Milk
Black Pepper - to taste
Red Chilli Powder - to taste
Oil/ Ghee (for frying)

Combine the first three ingredients (flour, salt, oil) to form a dough by adding required water. Knead the dough well and refrigerate for a while in a air-tight container.

In a small bowl, whisk an egg with 1 teaspoon milk, cheese, a pinch of salt and a pinch of pepper.

Take a lemon size balls out of the dough and flatten it with a roller. Sprinkle little oil and a pinch of red pepper over the paratha. Gather this make into a ball with your hands and gently roll out a paratha again.
Heat a tava on a medium flame. Place the paratha on the tava and apply a little oil/ghee. Flip it over and apply a little oil/ ghee again. As the paratha swells, make a small slit with a knife and pour the whisked egg mixture over the paratha (the egg should fall inside the slit and over the paratha as well) Cook well from both sides.
Hot Egg & Cheese Paratha is ready to serve. Goes perfect with tomato ketchup :))

Healthy Breakfast - ABC Smoothie

Since I started blogging, have got into this habit of randomly reading recipes posted by my fellow bloggers and ofcourse book-marking a few in the process as well.  While browsing I came across Kristin's Banana-Cocoa Smoothie ... was just too too tempted to try it immediately and so I did :) .. a few changes in the recipe and I could tweek it perfectly to my taste.. Loved it .. to the extent that I had 2 glasses of it :))

I used Almonds, Banana & Chocolate for my Smoothie .. naming it ABC SMOOTHIE.. Before we begin the process, chill 2 empty glasses in the refrigerator for serving the smoothie.

All we need is:
Banana - 1
Yogurt/ Curd - 1/2 cup
Milk - 3/4 cup
Cocoa Powder - 1 Tablespoon
Nutella Choc Spread - 1 teaspoon (Choc-lovers could pop in a big dallop ;))
Almonds - 5
Banana Slices & Chocolate Sauce - for garnish
Ice Cubes - few (optional)

Combine all the above ingredients in a blender. Pour into chilled glasses and garnish with banana slices & chocolate sauce.

Healthy Breakfast - Green Gram Chilla

I just love participating in blog events.. not only they attract newer people to visit my blog but also gives me an idea on what I could be cooking next (in simple words, it saves me from racking my brain on the ingredients, and instead I can focus on the recipe :)) .. Was keen to participate in Priya's CWS event & create a dish with Green Moong.

Every morning Arunesh expects a different delicacy .. and the lazy me always offers oats or cornflakes ;) .. untill I decided to try a new option if not everyday.. atleast alternate. Yesterday was one such option.. GREEN GRAM CHILLA.. healthy, protein-rich and tasty..

Ingredients
Green Moong Dal (soaked overnight) - 1 cup
Yogurt - 2 Tablespoons
Eno - 1 Pinch
Onion (finely chopped) - 1 medium-size
Green Chili (finely chopped) - 1
Fresh Coriander Leaves (finely chopped) - handful
Salt - to taste
Red Chili Powder - to taste
Oil

Cooking
1. Grind soaked Moong Dal with Yogurt, Salt & Red Chili in a grinder.

2. Tranfer the mixture to a bowl and add chopped Onion, Green Chili, Coriander Leaves & Eno. Mix well. Add water (if required) to acquire a flowing consistency (Taste the mixture to adjust the salt & chili levels)

3. Heat a teaspoon of Oil in a non-stick pan and spread the mixture with a spoon in round shape. (similar to making a uthapam) Spinkle oil along the sides to prevent it from sticking. Cover with lid and let is cook for 5 minutes. Toss and cook the other side as well.

Our Chilla is ready... tastes best with Mint Chutney & Tomato Ketchup :)
