Mumbaii... wasn't easy for a Delhi-ite me to settle in in Mumbai and cope up with the superr-fassttt life here... and a new job... looong working hours.. n the Indian work-culture... the lesser said the better ;) ... anyways its all good now n I so wanted to be back to my cooking .. n my blog :))</span><br />

<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">Though it really doesnt get wintery in Mumbai.. but watever pleasant it gets... decided to experiment a <b>Potato & Leek Soup</b>... this one was on my mind since I had seen this in Masterchef Australia season 1.. those who are Masterchef Australia fans... Poh had made this for the navy guys during one of her tasks.. and it just tasted so brilliant... its thick and yummm... sharing my version of the recipe...</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;"><br /></span>
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">Leek - 1 think and long stick</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">Potatoes - 2 medium</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">Milk - 1 cup</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">Olive Oil - 1 Tsp & 1 tsp</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">Butter (salted) - 1 tsp</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">Salt & Pepper - to taste</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">Garlic - for garnish</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;"><br /></span>
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">1. Coarsely chop the Leek & the Potatoes</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">2. In a non-stick skillet, heat the Olive oil and the Butter. As the Butter sizzles, add the chopped Leek and saute for 3-4 minutes.</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">3. Add the chopped Potatoes, sprinkle a lil salt and cook covered on a slow flame for about 10 minutes/ or till the Potatoes soften (keep checking with a fork in between)</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">4. Add milk and let it boil. Remove from the flame and let it cool.</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">5. Transfer the mixture into a blender and blend for about 30-45 seconds.</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">6. Taste the soup and add salt & pepper to taste.</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">7. In a small non stick pan, heat about 1 tsp of Olive Oil and saute coarsely chopped Garlic for about a minute, till garlic turns brown.</span><br />
<span style="color: #b45f06; font-family: "georgia" , "times new roman" , serif;">8. Pour the soup into mugs and garnish with garlic...</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">Haven't cooked with mango much this season.. but out of watever lil I did.. wanna share the <em><strong>MANGO KHEER</strong></em> recipe.. it was delicious and refreshing... </span><br />

<strong><u><span style="font-family: "Trebuchet MS", sans-serif;">Ingredients</span></u></strong><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Milk - 1/2 lt</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Condensed Milk - 1/3rd of a can (approx 125 gms)</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Mango Pulp - from 2 Mangoes (pref Alphanso)</span><br />
<br />
<u><strong><span style="font-family: "Trebuchet MS", sans-serif;">Cooking</span></strong></u><br />
<span style="font-family: "Trebuchet MS", sans-serif;">1. In a heavy-bottom pan, put the milk for boiling on a high flame. As the milk starts to boil, lower the flame & let it cook for a while till the milk thickens. This can take around 20-25 minutes.</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">2. Next, add Condensed Milk & stir well. Let the mixture cook. Once thickened, remove from heat and allow the mixture to cool to room temperature. (cooling might further thicken the mixture, hence keep that in mind while you cook the mixture)</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">3. While the mixture cools, pulp 2 mangoes - I pulped the mangoes with hands - did not use a blender so that the pulp has a inconsistent texture.</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">4. Once the mixture cools to room temperature, add the Mango Pulp to it and mix well. Refrigerate for 2-3 hours.</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">Serve Cold - Garnish with Mango pieces or chopped almonds... </span><br />
<br />

Fry till Onions are translucent. Add Babycorn and cook for 2-3 minutes. Next, add Broccoli and let it cook for another 2-3 minutes. Then, add the Mushrooms and Tomatoes along with some salt and let it cook. Once the vegetables are tender, add Tomato Ketchup and mix well. Adjust the spice levels with pepper, chili flakes and salt.</span></span><br />

<span style="font-family: "Trebuchet MS", sans-serif;"><span style="color: #660000;"><u>For the White Sauce: </u>Heat 2 tablespoons of Butter in a non-stick pan. Add White Flour and roast on high heat till it becomes brown. Add 2 cups of milk and stir continuously (this shall help in avoiding lumps) Once the mixture boils and starts to thicken, add Parmesan, Salt, Pepper and Oregano. Remove from heat and keep aside.</span></span><br />

<span style="font-family: "Trebuchet MS", sans-serif;"><span style="color: #660000;"><u>For Lasagna Sheets</u>: There are 2 kinds of sheets available in the market - those which can be used raw and shall cook while baking & those which need to be cooked before layering. Please follow the instructions given on your box. I used the ones that had to be cooked in salted boiling water for 8-9 minutes. </span></span><br />

<span style="color: #660000; font-family: Trebuchet MS;"><u>For Paneer</u>: Crumble the Cottage Cheese/ Paneer finely with hands. Add 2 Tablespoons of Mint Chutney (Mint Leaves blended with salt, green chili and little water) and mix well. This will add a minty flavor to the Paneer. However, this step isn't necessary - you could use plain Paneer instead.</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;"><span style="color: #660000;"><u>Layering: </u>Take a square baking dish and brush Olive Oil on the base and the sides. Cover the base with Lasagna Sheets (cooked in my case) Pour a layer of Vegetables. Sprinkle crumbled Paneer and then pour a layer of White Sauce. Repeat this layering another time (White Sauce being the final layer) and finally garnish with grated Cheddar Cheese. </span></span><br />

I was just so fasinated with the idea of combining Cheese & Broccoli that I decided to make a vegetarian version of the recipe.. substituting ham with some sliced fresh button mushrooms.. And trust me, the sandwich came out yummm.. </span><br />

<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">Bread - 2 slices (brown/ white/ whole-wheat)</span><br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">Cheddar Cheese (grated) - 3 Tablespoon</span><br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">Parmesan Cheese (grated) - 2 Tablespoon</span><br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">Broccoli (chopped into small florets) - 3-4 Tablespoon</span><br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">Button Mushrooms (sliced) - 3</span><br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">Onion Powder - a pinch (optional)</span><br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">Garlic Powder - a pinch (optional)</span><br />

<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">1. Add water to the broccoli florets in a bowl and microwave for about 30-45 seconds - this will soften the broccoli. Alternatively, you could steam it too.</span><br />
<br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">2. Combine Cheddar Cheese, Parmesan Cheese, Steamed Broccoli, Salt, Pepper, Garlic Powder & Onion Powder in a bowl and mix well. </span><br />
<br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">3. Layer the mixture over a slice of bread and then place the sliced mushrooms on it. Top with the other slice and press the sandwich gently with with both hands. </span><br />
<br />
<span style="color: #134f5c; font-family: "Trebuchet MS", sans-serif;">4. Heat a non-stick pan and drizzle 1/2 a tablespoon of Oilve Oil on it. Place the sandwich over it immediately. Flip the sandwich after about a minute but do remember to drizzle the balance Oilve Oil before you place the uncooked side. Leave it for about another minute before serving.. Incase you want the cheese totally melted, the sandwich could be heated for a lil longer...</span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">Condensed Milk - 1 can (400 grams)</span><br />
<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">Cream Cheese - 350 grams</span><br />
<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">Lemon Juice - 1/3 of a cup</span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">Crush Biscuits until powdered - add melted butter and mix well with your hand.</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;"><span style="color: #741b47;"><em>To set a cheesecake, you could either use a cake tin with detachable base or a round glass bowl with a flat base. In case you are using a round glass bowl, line the inner side of the bowl with aluminium foil (this will help in de-moulding the cake later). I used a flat base glass serving dish and lined it with foil</em>. Spread the buttered crushed biscuit and press it well with a back of a spoon. Refrigerate for 15 mins.</span></span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">Beat Cream Cheese in a seperate bowl till smooth and fluffy. Gradually add condensed milk and continue beating until smooth. Eventually add lemon juice and beat well. Pour this mixture in the refrigerated mould and refrigerate again till set. (best would be to refrigerate overnight)</span><br />

Had it not been for this combo, I would have never thought of making a <strong>CORN LEFAFA PARATHA</strong>... and they came out just perfect & yum that I made it 2 consecutive days... </span><br />

<u><strong><span style="font-family: "Trebuchet MS", sans-serif;">Ingredients</span></strong></u><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Whole Wheat Flour (Atta) - 2 cups</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Ajwain - 1 teaspoon</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Salt - to taste</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Red Chili Powder - to taste</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Oil - 2 teaspoon</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Water - to kneed the dough</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Corn (boiled) - 1 cup</span><br />

<strong><u><span style="font-family: "Trebuchet MS", sans-serif;">Cooking</span></u></strong><br />
<span style="font-family: "Trebuchet MS", sans-serif;">1. Mix Atta, Ajwain, Salt, Red Chili Powder in a flat- bottomed bowl. Pour 2 teaspoons of Oil and rub the mixture with both hands. Finally, kneed the dough by adding enough Water. </span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">2. Take 2 small balls from the dough and roll out 2 round chapatiz. Spread boiled Corn over a chapati and sprinkle Salt & Chili Flakes evenly over the corn. Place the second chapati over the corn (Its like Corn sandwiched between 2 chapatiz.</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Seal the ends by pressing the 2 chapatiz with soft hands ensuring that corn doesnt fall out.</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">3. Heat the tawa (flat frying pan) and cook the paratha with ghee/oil. Once cooked, cut the paratha into 4 parts and serve hot ... </span><br />

<span style="color: #7f6000; font-family: "Trebuchet MS", sans-serif;">Pulse the Onions, Green Chili and Coriander in a food processor. Next, add the Tomatoes and pulse again to make a paste. (we need to ensure that Tomato isn't completely pulped.. it should be chunky)</span><br />

Mix well (Either use a beater or beat with hand either clockwise or anti-clockwise... It is important to follow 1 direction only)</span><br />

<span style="color: #990000; font-family: "Trebuchet MS", sans-serif;">3. Pour into a greased cake tin. Bake in preheated oven for 20-30 minutes.Insert a skewer to check (it should come out clean). Let it cool before demoulding it.</span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">1. Boil Spagetti with water, salt and a drop of oil in a large pan. Once cooked, drain and excess water and keep aside in a sieve. (Do not over-boil..Al Dante would be best)</span><br />
<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">2. Blanch Tomatoes - Soak tomatoes in hot water for about 20 minutes or till the skin starts cracking. Remove from water and de-skin. Chop the tomato in small cubes. (Tomato will be very watery, make sure you don drain the gooey part - retain that along with the cubes)</span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">3. Preheat the oven at 350 F.</span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">4. Heat Oil in a Non-Stick and saute garlic for about 2 minutes. Add Onions. Once Onions turn pink, add Carrots, Capsicum and the other veggies. (If you are using mushrooms, add them in the end) </span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">5. After sauting the veggies, add the blanched-chopped Tomatoes and Salt. Cover with lid and cook for 10 mins on slow flame. </span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">6. Add Baked Beans and the Seasonings (pepper, chili sauce, etc). Mix well and add the cooked Spagetti and 3/4 cup Cheese. Taste the mixture to adjust salt and spices level.</span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">7. Transfer the mixture to a glass baking dish - sprinkle Oregano and finally garmish with Cheese. Baked for about 10-15 minutes or til the cheese melts.</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">Thekua is a tea-time snack made of wheat flour & jaggery/sugar.. they could be either deep fried or baked.. can be stored for upto a month in an airtight container. Since it was my first attempt with biscuits, I decided to stick to smaller portions:</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">Whole Meal Flour (Or Wheat Flour) - 1 cup</span><br />

Fry till golden brown & crisp. I wanted to try baking as well thus, I baked half the biscuits. Preheat the oven at 350 F and line cookies in a greased tin. 5 mins of baking and cookies were ready :) </span></div>

While browsing I came across </span><a href="http://www.thepastryaffair.com/blog/2011/11/29/banana-cocoa-smoothie.html" target="_blank"><span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">Kristin's Banana-Cocoa Smoothie</span></a><span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;"> ... was just too too tempted to try it immediately and so I did :) .. a few changes in the recipe and I could tweek it perfectly to my taste.. Loved it .. to the extent that I had 2 glasses of it :))</span><br />

<span style="color: #741b47; font-family: "Trebuchet MS", sans-serif;">I used Almonds, Banana & Chocolate for my Smoothie .. naming it <u><strong>ABC SMOOTHIE</strong></u>.. Before we begin the process, chill 2 empty glasses in the refrigerator for serving the smoothie.</span><br />

I just feel that my cakes aren't always good-looking.. and mostly settle in for muffins.. but owing to a new cake tin n the urge to try "marbling", I tried the <strong>CHOC-VANILLA CAKE</strong> :)</span><br />

Also, I thought of trying "marbling" .. don't think I was very successful with it but it surely tasted awesome ;) .. If you have comments about marbling.. pls pls do mention them.. <span style="font-family: "Trebuchet MS", sans-serif;">1. Pre-heat the oven; 350 degree F</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">2. In a bowl, mix refined oil & sugar together. We could use an egg-beater for the same.</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">3. While beating the mixture, keep adding the flour and eggs slowly until all the ingredients blend well. Once done, pour half the batter into a seperate bowl.</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">4. Add vanilla essence to the first half of the batter and mix well.</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">5. Add cocoa powder & milk to the other half of the batter and mix well.</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">6. Take a baking tin and brush it with oil. Spoon batters into the prepared pan in 2 layers, alternating spoonfuls of vanilla and chocolate like a checkerboard. To create marbling, run a table knife through the batters in a swirling motion.</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">7. Bake, rotating the pan halfway through, until a cake tester comes out clean, 40 to 50 minutes. Transfer pan to a rack to cool 10 minutes.</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">2. Tranfer the mixture to a bowl and add chopped Onion, Green Chili, Coriander Leaves & Eno. Mix well. Add water (if required) to acquire a flowing consistency (Taste the mixture to adjust the salt & chili levels)</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">3. Heat a teaspoon of Oil in a non-stick pan and spread the mixture with a spoon in round shape. (similar to making a uthapam) Spinkle oil along the sides to prevent it from sticking. Cover with lid and let is cook for 5 minutes. Toss and cook the other side as well.</span><br />

<span style="font-family: Trebuchet MS;">Ginger (medium-size) - 1 grated</span><br />
<span style="font-family: Trebuchet MS;">Garlic - 6 flakes finely chopped</span><br />
<span style="font-family: Trebuchet MS;">Mustard seeds - 1 teaspoon</span><br />
<span style="font-family: Trebuchet MS;">Chili Powder - as per taste</span><br />
<span style="font-family: Trebuchet MS;">Salt - as per taste</span><br />
<span style="font-family: Trebuchet MS;">Vinegar - 3 Tablespoons</span><br />
<span style="font-family: Trebuchet MS;">Jaggery (Gur) - small piece</span><br />
<span style="font-family: Trebuchet MS;">Mustard oil - 3 Tablespoons</span><br />
<br />
<span style="font-family: Trebuchet MS;"><strong><u>Preparation</u></strong></span><br />
<span style="font-family: Trebuchet MS;">1. Peel the Carrots and Turnips and dice them - I cut them around 1 centimeter long.</span><br />
<span style="font-family: Trebuchet MS;">2. Cut the Cauliflower into small florets.</span><br />
<span style="font-family: Trebuchet MS;">3. Boil water in a large pan. Once the water begins to boil, remove from flame and blanch the chopped vegetables for about 5 minutes. Drain the water and put them to dry in the sun for about 2 hours.</span><br />
<br />
<span style="font-family: Trebuchet MS;"><strong><u>Cooking</u></strong></span><br />
<span style="font-family: Trebuchet MS;">1. Heat oil in a non-stick vessel and crackle mustard seeds. Add Ginger - Garlic and saute for about 5 minutes.</span><br />
<span style="font-family: Trebuchet MS;">2. Add the sundried vegetables along with salt and chili powder. Stir well and cover with lid. Let it cook on a slow flame.</span><br />
<span style="font-family: Trebuchet MS;">3. Heat Vinegar in a bowl in the microwave for about 30 seconds and add Jaggery to it. Stir vigourously till they blend </span><span style="font-family: "Trebuchet MS", sans-serif;">well. Add to the vegetables. Stir well and continue cooking for another 10-15 minutes. (<em>Taste the mixture to adjust the salt and chili level)</em></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">4. Transfer the mixture into a air-tight container and add mustard oil.</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">5. Ideally, we should put the pickle container in sunlight for 3-4 days but it is anyways ready for consumption immediately as </span><span style="font-family: "Trebuchet MS", sans-serif;">well :))</span><br />
